Cooking in Japan

Post by ashmie » Sun Feb 28, 2016 1:27 pm

Recently I'm trying to expand my list of recipes beyond the few fail safe bolognaise, curry and pasta dishes that got me through Uni. If anyone has any good ideas or recipes they would like to share by all means add to this thread.

Introducing the Roast Wind Up Bird Chronicle.
Aka My friends helped make a roast. This is a meal based on 2 suggestions after I asked friends online what a good meal to recover health in winter would be. Recently I have been sleeping too much and not eating right.
First we have a slight variation on Andre's Roast turkey dinner. No turkey in Japan so I went for chicken.
Small strips of chicken breast roasted in basil, salt, pepper and nutmeg. After 5 - 10 minutes I added the runner beans to the 'oven' so they could cook together. While doing this I boiled the potatoes and lightly fried garlic and onion until golden and added maitake (mushrooms) with mirin and tonkatsu sauce. This was the substitute for the gravy. When the potatoes were done I seasoned them with nutmeg and butter (cinnamon is better if you have it).
Put it all on a dish, gave it final blast in the oven for a minute and then ready.
Serve with a good white wine and/or a tall glass of water.
Afters is chocolate cake (triple choc is recommended if you have it) and a shot of coffee.

Verdict: Result was amazing. This is probably the best roast I've made in Japan. Those that live here will understand about the not having a decent oven situation so I was very pleased with this. Big shout out to Andre Martinez for the meal idea and Kev Carr for the mushrooms. Maitake are good for recovering from fatigue and are what Kev ate for 6 weeks after completing his world run. Andre is an ex marine so enough said.
I have not eaten this well on a Sunday since living in the UK. This was just enough food, anymore would have been over doing it. The best part is my apartment now smells how a warm Sunday should with the roast vegetables and the coffee.

Cleaned and restocked the fridge. It wasn't until today, and too late I might add that I realised what a chore cleaning the fridge could be. I think we hadn't done ours for well over a year. My wife used to take care of all things kitchen and preferred it that way but I know the fridge is a huge undertaking now.
Want to earn some brownie points and have your wife love you forever? Take it from me lads, give the fridge a clean and surprise her. ;)

best. pie. ever.

seriously, totally doable here in japan - ive made it several times. you can make your own pie crust, cos the puff pastry here is teeny. its not a cheap meal by any stretch, but will comfortably feed 6, or 1 person 6 times, assuming you freeze the leftovers. Reading your post, its not clear if you have an oven, but you do realise most microwaves here double as ovens, yeah? ive made steak pie, baked cakes and roasted whole chickens in mine.

imho, cooking here is not radically different to cooking at home, 'S just that some stuff costs more.

anyway, its good that youre stepping outside of your comfort zone in the kitchen. best of luck in your culinary adventures. i have a shedload of tried and tested recipes if you want em. also, dont buy fresh rosemary - come round here and get it from my garden -the stuff grows like a weed...

I have the standard microwave oven with the oven setting which Japanese call an oven yes. :)
That pie looks like a lot of fun, I'll give that a go next.
I really enjoyed cooking and cleaning yesterday and got a lot of tranquility from it. Similar to the catharsis of painting minis actually.
