When listing a Fireteam on a master kill team roster it says, "Non-Specialists of the same Datacard are organized into groups called Fire Teams." Does that mean that all, for example, basic Grey Knights would be included on a single Fire team even though they have different weapon loadouts and therefore only use a single slot on the roster?

Each model will still take up a slot on the roster - Fire Teams are mostly a campaign construct, a group of non-specialist models that all level up together. For one-off games you can pretty much ignore the idea.
